Any classic amiga software that will read pdf files?
Perhaps more daring, anything that will let me create a pdf from text?

ghostscript (which you can gind up to version 8.6 on aminet) will allow you to read pdf files as well as convert them to postscript.  It has been a while since I have used it, IIRC, it can also convert from PS to pdf.  In any case Pagestream supports pdf output so you could use that to convert text to pdf.
