Are those all 3rd edition? Esp. the one with the funky 'spanish' (as in redrum's A500 batch) Amiga logo.

That one is the first printing, the others are 3rd and 4th printings

The hardware manual covers OCS chipset. All the other RKMs cover AmigaOS 1.0 & 1.1, except the includes and autodocs, which is up to AmigaOS 1.2 & 1.3.

I have the Intuition one. R.J. Mical wrote it and there are some interesting concepts mentioned in it that didn't seem to make it to the finished product, such as standard screens other than Workbench, I guess for consistent environments.

How many printings were there?
I have copies for 2.x but they look completely diffrent.
