HBMonopoly example:
Open settings and network page from there. Select "network mode". Who's serving the game selects "Server" mode and suitable port. Others select "Client" mode and type server's port and address to fields. Then everyone starts new game and selects number of players to 1 (unless someone has more _local_ players) and types his name to it. Connection window should appear and everyone waits until server starts the game.
Remember that server should have open port to internet, otherwise other players can't join. If you have router or firewall, you should have port forwarding etc setted up correctly.
BTW. HBMonopoly has bug with it's chat feature with certain Amiga's TCP/IP stacks. So if you don't know exactly what stacks everyone has, you should do the chatting in IRC for example. And server should have autosave option enabled, because sometimes there will be moments when you need to reload game when someone drops etc.
