Yes, just make sure you do a direct copy, don't copy the files off and re-write them to a new CD - Amiga CDs tend to be written with an extended version of ISO9660+RockRidge which supports file comments and some other Amiga FS stuff.
If you copy the files manually and write a new CD, you will probably end up with Joliet filenames and lose any file comments and special attributes (such as "executable").
Do a direct CD copy, but only for personal back-up purposes.
