Are you deriding free / open source in some way? Only there's a tonne of non-open souce software on those two operating systems, Far more so than AmigaOS, so if you really dont want to stick linux or windows your choice of proprietary software is going to be severely hindered.

I have nothing against free software/open source, such as Gimp, Inkscape, OpenOffice, etc. But these already run very well on cheap hardware - I don't need a 2500 Euro machine for it. I would expect special software for a special OS, thats all.
