The Z80 alike CPU in the GameBoy is very similar to the x86 CPUs (same endianess as well), unlike the 680x0, which need more overheat to emulate it. That's why it is very easy and fast to emulate it on Intel CPUs. Back in 1993 I had an Sinclair emulator which worked pretty well on TurboXT (8MHz).
But there are some fast Z80 emulators for 68K as well. The Sinclar ZX emulator - Speculator shows speeds on unaccelerated A500 of 33% percent from the real Spectrum, which is I can say impressive. On unexpanded A1200 it flies. The ZXAM emulator is also very cool and not much resource demanding, but does not work on 68000 CPU. There is also QL emulator which is very fast. The Sinclair QL uses 68008, which is the 8 bit little brother of the 68000, so not a problem at emulating it.
