I personally recommend OctaMED SoundStudio to record sound from parallel. Easy as plugging in and hit record.  My parallel digitizer is in a black box and only does mono sound, but I forget which company made that one.  Came in some plastic casing with a older man playing on a keyboard I think.

ahh, good point. a lot(?) of the tracker apps have their own built-in sampling/editing functions.
