Any knowledgeable restaurant waiter will tell you that it’s about camouflaging themselves against sea predators.

I believe that the White on their bellies is for camouflage... that doesn't explain why the rest of them is black...

from above they are hidden while swimming.
But it could be that it’s a flocking/social marker.

it is interesting to note that most seabirds are white, probably due to a visual indication to show the rest of the flock where the fish are...


He was having a bit of difficulty with his seafood...

That was my initial thought. Unfortunately it seems looks are very important to "birds." :-(
