I know it's possible - because it's Amiga :D

Discounting a Rejuvenator or Phoenix board has anyone achieved this?

As far as I am aware there are no plug-in upgrades to achieve this.

A solution I am thinking of is to make some kind of adaptor for the DIP style Agnus to a PLCC style socket, to allow a "MegaChip" style upgrade to be used.

Does anyone have any ideas?

The fat agnus does clock generation that is handled by components on the amiga 1000 board. You may have to disable that and run wires to the fat agnus instead.
 
There is a reason the rejuvenator is so complex. But it sounds like an awesome hobby project.
 
I'd start with just trying to get it to work with a standard agnus first.
