Well in fact Apple seems to always use ATI also (look at the latest PowerMacs, they are using both ATI Radeon and NVidia (depending of the model).
So I think it'll be needed to at least support ATI (the easiest as there are ATI Radeon driver already for MorphOS IMHO) and at best support ATI and NVidia.
And yes IMHO the recent systems should be targetted (Radeon iBooks, Radeon and NVidia Powerbooks, Radeon and NVidia PowerMacs, NVidia iMacs, NVidia eMacs). But I think this will need lot of work
Maybe targetting the laptops first would be better as this is more interesting than desktop machines as there is already the Pegasos for that
