F/A-18 was continued out through a series of at least four more games on the PC, each getting more and more arcade-y at every release.  Falcon FTW! (And Gunship, Gunship 2000 - the list goes on and on!).

Hired Guns was in the works years ago as - oh, noes! - an FPS using the Unreal engine (or maybe Unreal Tournament; it's been a long time and the project is dead, so I really can't recall).

Never cared for those little jumper/shooter sidescroller games that seemed so popular.  Bleaugh.  I wanted games that pushed my Amiga to the limit, not demanded I boot in PAL mode on an unexpanded A500 or A1200.

With that said, inasmuch as it was frustrating as all get out I'd like to see a remake of The Immortal.  Good action adventure game with fantasy RPG touches!

It's also a shame that the FRUA (Forgotten Realms Unlimited Adventures) mod community wasn't based on the Amiga.  You could still be playing all the classic AD&D modules today, and update the graphics to your own personal tastes.
Back away from the EU-SSR!
