There is no worth or value proposition for the Amiga Hobby in general imho.

This is a hobby and it could be a fun project. If your goal is tinker and have fun with a ecs machine and all the software that will run on it, this is the project for you!

If you want to go for high resolution RTG for prettier workbenches and productivity, then this may not be the best route to take.

I never owned a 600 (in fact it is the only version I never owned:) so I have no idea about caps and such, but I would look into it.  The next question is are you handy with wedge Amiga's?  I myself own a 1200 and learned very quickly that I lacked the sophistication of many of the Amiga users here.  I added to my 1200 and tweaked it and it was a pain trying to get it reliable, it just wasn't fun but frustrating.   Being the simpleton Big Box Amiga's were the way to go for me, since adding a zorro card is pretty simple and run reliably.  I hope the vampire makes it to 3/4k's someday!

No idea on pricing.
