On the driving scenes, I'm new at this film making stuff, but I've learned that the more cuts the better sometimes, to hold the viewers interest.
Not really. A well-timed cut can re-engage the viewer by showing them an interesting new angle on what they're watching, but note all those qualifiers: it's
what you're cutting to, compared to what you're cutting
from, that's the point of interest, not the mere fact that you've broken visual continuity from the previous shot. Something like that driving scene, where it's simply a succession of marginally-different angles on the same exact thing, none of them particularly interesting, is just confusing.
