What level do you want to start with? There is a programming forum for Amiga at
http://utilitybase.com/ with the reference materials for AmigaOS 3.9 available. Unfortunately there seems to be some sort of attack notice there but I haven't seen it there myself.
If you're looking for software, head for
http://aminet.net/. It has most of the free-ware and shareware stuff for the Amiga. -edit- Keep an eye on the architecture icons. You can't run PowerPC apps with the emulator.
