If you get the ACA620, the Workbench will speed up immensely! As will 3D games such as Frontier, Virus and Citadel. It makes a huge difference.
Also, if you're using WHDLoad, many more games will now work whereas before they wouldn't (required 68020).
Workbench on a 68000 in 8 colours is a bit tedious, so if you're a big Workbench user it would be a big bonus.

The A1200 has more potential as you know, so there's no competition...the A1200 wipes the floor with the A600. I'd never pick between the two though, I'd make sure to have one of each!
Anyway... if i had to pick between a standard A1200 (2MB Chip, CF hard drive) and an A600 (2MB Chip, CF hard drive and ACA620 with 12MB Fast) then I'd pick the A600 without a doubt.
But...if you were to sell your current A600 setup, you could afford an A1200 with either an accelerator or a simple memory expansion card. And an A1200 even with a simple Fast Ram expansion card in the trapdoor will be a better machine than the said A600, mostly due to AGA.
