Simplest would be to use the amiga to read the workbench floppies to adf, and then transfer these files to the PC.
If this is not possible:
Reading Amiga Floppy Disks on PC or just buy AmigaOS 3.5, 3.9, or Amiga Forever package which all have AmigaOS on CD-ROM.
