hi Alex, I don´t have much experience with a scandoubler, but without scandoubler the best resolution can be reached with Double Pal Hires Noflicker. Should be possible to get up to 782x512 or something like that ...
Also when you have your Workbench installed then use in Prefs the program Overscan to get rid of the grey edges of your Workbench screen
