A Lot of times they seem to be able to find TVs that only have RF modulated coax input.

Depends on your luck :)

I stayed at one in Orlando that had an fairly nice LCD TV and I got all excited because I brought my notebook. I inspected the back of the TV and there was an aftermarket metal plate covering the area where the other inputs probably were.

I think the last few times I have gotten LCD TVs I would have preferred the standard 27" Tube anyway.  In south Florida hotels you almost always need to have the AC until running and some of the newer LCD TVs really don't have room for proper speakers.
