I used Sega Genesis pads for many years. Now I use a Playstation adapter which emulates the CD32. Is this true that the use of Sega Genesis can fry the Amiga chips?

No, no, NO!
Never use a Genesis/MegaDrive pad with an Amiga. Yes the sockets are the same, but it can fry one of the internal chips.
As for using CD32 pads with the 500/1200, I don't know. It should work as I have regularly used my CD32 pads with my A600's (before they broke last year).
If you wish to use other control pads with a C64 I suggest you search for the SX64. If I remembered correctly, thats the name of a new cool piece of tech that (depending on which unit you buy) will allow you to plug in NES, SNES, MegaDrive/Genesis, PS2 and a few other console pads into your C64!
