Very nice machine that is, and all A500/600/2000 ROMs will work but you definitely need to find newer Extended Roms (two chips V2.30 / V2.7 for kickstart 3.1 or 2.x) before Kickstart ROM upgrade, otherwise you'll lose CD-ROM support. Good luck with your newfound Amiga!
