I'm currently building an A1200 project.  It's PSU is an ATX.  It was just as easy if not easier than an AT.
To switch it on and off I just put a small chrome toggle switch between the green wire and earth (black wire next to the green one) on the ATX PSU's power connector.  Works fine.  :-)

I had some how lost my original Psu for my A1200 so I used the Floppy power cable to power it from an AT psu...

no idea if its bad to power the A1200 from the Floppy power port.. but seems to work.. :)

(I made it so that it has a Molex plug sticking out the back for connecting to the psu :)

This will power the motherboard but your sound will be distorted/choppy due to the lack of -12v

The molex only carry +12v, +5v and GND

Ahh good point.. I did not have sound hooked up at all so did not notice that :)

as you can tell I don't use it much..
