The Derringer runs at 25 MHz but a 50 MHz version also exists.  Can I upgrade the 25 MHz 68030 for a 50 MHz 68030?

Yes.  Jumpers on the board and the crystals will provide clues on how to do this.

Overclocking should be possible. However, the cards that left the factory as 50MHz cards, usually have other components which have tolerance for higher frequencies. (I've investigated this while I also have a 25MHz version). In the end, I didn't try it. I'd say YMMV and let us know if it works ok.

Interesting.  My understanding is that 25MHz up to 50MHz boards are all the same except for crystals, jumpers, CPU, and FPU.

Yes, do give this a try and report your results.
