My 2000 has 2.0 ROMs in it currently.
Is it possible to install 3.0 ROMs in a 2000 and would it be worth the effort?

Yes - replace the 2.0 ROMS, but skip 3.0 and go for 3.1 (unless you happen to have 3.0 laying around begging to be used, but even then... nah).
What's involved is actually a pain in the ass. You have to remove ALL of the screws on the drive/power supply cage (at least 7 of them), unhook the power supply. Unhook a hard drive if it's sitting in a floppy bay. Unhook the floppy connectors and lift that beast out of there. Then you have to located the Kickstart chip next to the 68000 and yank her carefully and then insert your Kickstart chip made specifically for an A500/A2000.
Reassemble and install Workbench 3.1
Of course, some may ask what you want to do with the machine.... if you're only going to be playing games off floppy, sure - maybe leave 2.x in there and forego all the hassle, but the installation of 3.1 will open up many a new door of opportunity for your machine in the not so distant future
