However my question is, as it has been asked before, will the MOS port work on all MacMini versions we could find around? Or maybe we would need to find an specific one? Would it work on iBooks? Will it support G3 or G5 (that would open a wide arch of machines to our purposes) or just for G4?

The first release of MorphOS with Apple hardware support will include support for *all* G4 Mac Minis (as said above). No other hardware is confirmed yet.
There was also an experimental port on the powerbook shown. *Maybe*
 MorphOS will get support for this kind of devices later. But it is *strongly* suggested to not hold your breath for a powerbook version - chances are quite high you will die on oxygene shortage during holding your breath...
