It is definately possible.  Whether anyone has actually done it yet?  Don't know.  Once you figure that problem out, have a look and see if a stowable LCD monitor could somehow be rigged onto a regular A1200.  It might not be as slick as an STbook, but you could lay claim to owning first real Amiga "laptop".  :)
