Is it possible to use an assigned IP even though I'm using a  router and everything else is on DHCP?

Yes, just make sure the IP you assign to your Amiga is outside the DHCP pool configured in your router. i.e. if your router is configured to allocate addresses from 192.168.0.2 to 192.168.0.100, give your Amiga something like 192.168.0.101. If you don't do this, there is a chance one of the DHCP clients will pick up the same IP as your Amiga.

Also, make sure you configure the gateway and DNS servers with the IP of your router.
