Seeing as it looks like this has turned from OS to apps, here I my Apps:-

A decent code editor, with syntax colouring, auto indenting, and bracket/brace matching.

A KHTML based browser like Safari, small and fast.

An iTunes style Music package, CD/MP3/Rip/Internet radio package without all that skinning nonsense and decent playlist compatibilities

An iPhoto style digital camera album/download program

An updated version of WebPlug, perhaps with CSS suport and using XHTML rules (the tags are a little mixed in current versions).  Webplug is simply excellent.

An RTF word processor, doesn't need to be flash, just to be able to handle different fonts/colours, lists, tables and pictures (the RTF spec allows for all these).  things like a spell checker, wordcount etc. as well.

As you can see I'm pretty heavily influenced by the Mac, but what ever you say about Apple, they do good software with the OS.

 I *need* things like Photoshop, Director, Soundforge, Premier, Final Cut, Illistrator and others to do things for my degree, but I'm a realist :-D
