I have several Apollo 1240 and one 1260 and they all work fine with both FPM and EDO, even double-sided. Limit is 32 MB if one SIMM socket is soldered.
It is possible to solder another SIMM socket for another 32 MB (usually need towering after that because it would be at 90°).

Just get any 32 MB 72 pins SIMM (low profil is better though for desktop use).
Set jumpers according to the SIMM access speed.
