Why not load up CrossDOS(tm) on the A500 and dump the ROM image to a PC formatted 720k disk? Surely your Mac can read PC floppies?
Even if it can't, you can take the floppy to a machine that can (NetCafe maybe!) and email the ROM image to yourself.

At least not since the G3 models were introduced...

Which is why I also mentioned the email method.
Even the OS3.1 ROM can't possibly be bigger than 512KB or it wouldn't fit on the chip, so it'd have to fit onto a 720K disk.
