If you've got it currently working with your TV, why couldn't you use that picture to work with the Amiga to find a screen mode suitable for your monitor?
You can put out both images at once I believe. If you bought your adapter from AmigaKit, they include a nice page on how to work with a VGA monitor and the Amiga screenmodes.
