Have a look at
these FAQs that describe how to transfer a ROM image from a real Amiga.
I'd have thought
Amiga Classix would have had UAE included to provide the emulation, but I don't know if it comes with its own ROM images. I was under the impression that
Amiga Forever was the only legal way to get the ROM images on CD...

P.S. In answer to your first question, AMOS runs fine under UAE...
