I need to run them into a VGA IN port somehow.

That is your biggest problem... And well, it's all but a show-stopper.  Google is your friend, but let me tell you, there's not a lot out there.  If you're not lucky enough to have exactly the right display on-hand (one that takes a more normal VGA style signal, or has a separate converter for it included), it's a task of daunting proportions.  For a lot of laptop displays, the only thing capable of displaying an image on that panel is the video card built on the motherboard of that laptop.

I had exactly the same idea for an old 800x600 display from a junk laptop.  I searched it a lot, and the general consensus from people smarter than me is that you have to generate a LVD signal with a rather different set of parameters than a typical VGA/RGB type output.  Worse yet, most laptop panels are not standard wiring, do not have standard connectors, and from being poorly documented to entirely undocumented.  Then, to top it off, a circuit for converting RGB (or VGA) type signals to an LVD panel is quite complex.  I only found one pre-built circuit available, and it was more expensive than just buying a small LCD monitor.  I didn't find any kit or diagrams that were followable by my (admittedly limited) electronics skill.

In short, I shelved the project, and hacked the worthless laptop motherboard and display into an electronic picture frame, instead.  A novel conversation piece, but not nearly as satisfying as my original plans.
