Are you playing games from (imported) ADF, WHDLoad or from custom system?

I had a similar problem.

When you import ADF there are options for JIT , customize momory setup and Use faster Chipset and USe Turbo Speed Floppy Drive (for ADF images), Play around with those option to get optimal settings and performance per game.

When not gaming, does the main A600GS launcher work fine or it is also lagging on 1080p?

I would go to Amisphere Profile => Advanced Update => then check all the options (applications.lhapps, system.lhapps, programs.lhapps and amiberry.deb, a600gs.deb) and Install selected archives. After that restart the machine.

I would also play around with Display options:
- Single or Double Line Mode
- Display Correct Aspect Ratio

Also did you check your power adapter? The A600GS needs at least 5V/3A 20W to be sure.

That won´t do anything to the emulation speed for normal games ...

I guess that´s due to a not correct working res on THAT particular LCD TV ! I would first of test another monitor before doing something crazy that is unnecessary ...

I'm just suggesting what I did when I had some issues. It also came to my mind that his TV is the problem but forgot to edit the post.
Your suggestion seems like the most logical solution.
