Can't help with all of them, but here's what I use:

Wordprocessing: AmigaWriter (A little unstable, but it saves in rtf format)
Scanning software: FxScan
CDwriting: MakeCD
EMail app: Yam
WebBrowser: IBrowse 2.3
Video Player: Frogger
