Dark Forces I and Dark Forces II: Jedi Knight
DOOM
Shadow Warrior
Castle Crisis (Warlords Clone for the Atari 8-bit)
Yoshi's Island
Bruce Lee (Atari 8-bit as well as the more recent GBA Bruce Lee)
Bionic Commando (NES)
Grandia II (Sega Dreamcast)

You know, I really don't have an answer for this, I could sit here and list great games all day.

Oh geez, how could I exclude the Half-Life series or any of the System/Bio Shock games?!!? :)

Then of course there are the two Knights of the Old Republic Star Wars RPG's.

Too many games to list I say! :)
