My question to the 'community' is do you think this is too expensive for what I am getting? I am not sure about shipping costs from Denmark to the USA so I would have to take that into account.

You would get a better and cheaper A1200 System at lower shipping costs if you buy it from Vesalia.

Let's take Vesalia for example. They sell new A1200 with 40, 60, and 80GB hard drives in them. They had to open NOS units to install those hard drives, no doubt about it.

I am not sure if the drives are installed into the Amiga from Vesalia.
