Toaster 4000 manual
This link will get you much closer for the manual even though it's not the older 2.0 version.
I think I have an extra original 2.0 manual in a box somewhere....

My original 4.x manual looks like a copy (The illustrations are difficult to view.) even though it has the original binder and heavy section dividers.  Thanks for the .pdf Pyromania. Much appreciated.

and downloaded the open toaster SW.

Not sure about that. The software offered on the openvideotoaster site is the source code and wont do you any good...  you would need to get the NewTek released software.
2.x comes on a stack of floppies and occassionally found on ebay and most of the time a disk or two are corrupted. Your best bet is to get the 4.x release on cd. But that brings up the problem of getting a cd unit onto your miggy...
...the joy of outdated commputing. :)

Unless Mr. P Mania can help ya a little farther than with just a general link.
