Easy.  Put the "Multiscan" and "VGAOnly" monitor drivers in sys:devs/monitors.  You will quite likely find the drivers in sys:storage/monitors in one of your Workbench 3 disks (which should come with the A1200).  Now reboot.  Then run the screenmode prefs program and you should see "Multiscan:Productivity" modes at 31 KHz.  Without "VGAOnly" you will get 27 or 29 KHz, which may not work on your monitor.  

As you may understand, you will need to do this with your video monitor plugged in too.  I suggest you connect it on the composite output of the A1200.  Or connect a TV instead using the RF output (the cable should be provided already with the A1200).  You will then be able to connect your VGA monitor on the RGB output and see if the VGA screenmode has worked.  Be warned: after changing to VGA mode, switch off the video monitor/TV.
