I run a stock Amiga 500 1.3 (with a hard drive though).

Here is some of the software I found works well:

Lazy Bench 1.02 (Kind of a start menu)
Hippo Player (Sid & Mod Player)
NComm (Terminal Program to "surf" the internet or BBS)
SuperBase (Small "Database" program)
Many compilers (HiSoft Basic, AMOS, LatticeC etc)
GO-64
Amiga Vision
Magicwb1.3 (Run Magic Workbench Icons in 1.3)

Also if since you have Kickstart 2, you can run my favorite app called Algo Music, random music generator that actually works.

Yah that actually happened to my Amiga 500 just after I got it, but the one I have in there now will probably die in a year or two.  Unless you go for a CF solution its hard to guarantee anything.
