Ehh, use a monitor switcher, when the CV64 has one build in??

The connector on the CV64 that is closer to the Zorro ports are video in, the one far away from the Zorro ports is video out. Loop the Amiga video out from the motherboard to video in on the CV64, and you only need to have one monitor.

Seems like you have it correctly set up already.

Yes, either that or get a scandoubler. Adding a graphics card doesn't mean that everything is displayed through the graphics card.

IMHO it would be a real shame not to use one of the best features the CV64 has, but each to their own :-)
