If you have the skills to desolder the 040 CPU, then you should be able to do the conversion rather easy. It's just a matter of moving 1 jumper and a voltage regulator on the board, besides exchanging the CPU.

Dunno where you can get the oscillator from, I have only managed to find 64 MHz ones, but haven't looked that hard.

You can be lucky to find a board with a socketed 68k CPU, but most have the CPUs soldered directly to the PCB. The voltage regulator and the jumper is also soldered to the PCB, so it's another thing to unsolder/solder to use your terms.
