There's DED -the Disk EDitor- it's a bit old but works flawlessly (at least here, on my A4000T/PPC-060 OS3.9BB32)
should be on Aminet.

What is cool with it is it's two editing views (as pure hex or as AmigaOS blocks), editing from bock zero,etc...
it's made for FFS but works with other FS -even ntfs!- at least for viewing :-D
