Check out Blackford Technology's Aural Synthetica. It's a sweet software synth with a patch panel style interface and lots of filters to tweak. http://www.blachford.info/blachtech/

Soinc Pulse's SoundFX looks like a nice sample editor. http://www.sonicpulse.de/

I liked the software that came with the AMAS sampler / MIDI interface as well, but I can't remember the name.

I use a DSS8+ now, and apart from the integration wihtin the hardware, the software is pretty lame (well, maybe not lame, but it's not very intuitive).
