If the harddisks are still functional, it would work without a problem. The one thing you should be aware of, though, is that it is possible you have to reformat the harddisks: not all SCSI-controllers like it if you connect a harddisk which has been formatted on another Amiga-controller.

And, ofcourse, check the SCSI-id numbers. If your A3000 has an internal harddisk, there is a chance the SCSI-id numbers of your internal harddisk is the same as one of your exteranl harddisks. Which will not work very well...
