It's do-able, but for starters are you adverse to upgrading to 3.1, or at least 2.1?  It's much easier with the newer versions.

(GVP has many different names for their controllers - I'm assuming it's this one based on the title of your post.  You should probably confirm exact model)

Obviously the Guru-ROM is the most desirable but they are rare and require a PCB adapter.  A guy on Amibay was making & selling them last year.  The next-best ROM version is 4.15, "tjlazer" was selling these on ebay pretty frequently.  I've owned a bunch of these GVP cards, you'll need the latest ROM's (if you don't have them already) to support removable media.

FaaastPrep is horrible software, especially with any drive larger than a few hundred MB.  Recommend 3.1 to use HDToolbox, if you're determined to give it a go with 2.1 try HDInstTools:

Obviously you'll need to have the proper cables to physically connect these drives to your Amiga, as well as any terminators, jumpers, set SCSI ID's appropriately, etc.

Sure.  You'll need to use a mixer or connect the audio output of the CD drive directly to the input on your stereo since A2000 motherboard doesn't have an audio input connector, but it should otherwise be possible.  All the software does is tell the drive to "play", the Amiga doesn't do any processing or decoding of the audio, beyond that.
