I don't know of one that "guarantees" to display everything.  I've always used a combination of programs like SysInfo, Scout, Commodities Exchange, Executive, some various command line utilities, etc.  Maybe something like SnoopDos?  I think you're going to wind up wanting to use a combination of a couple different applications to capture all info.
