You'd probably be better off using WHDLoad to run those old games.  AFAIK there's various ways to softkick an A500 kickstart into an A600 (including physically installing the ROM, or a ROM switcher), but unless you unstall a bunch of other hacks you will lose your hard drive interface, PCMCIA slot, and it still won't address your memory being in a different range than that on an A500.  In other words, just use WHDLoad or get an A500 unless you enjoy banging your head up against a wall.  ;)
