If the machine has been upgraded to ECS, you should be able to do the boot menu (hold down both mouse buttons while booting up), at least for the PAL part of it
Only with Kickstart 3, I think.

With Kickstart 2, the rightmost button in Degrader should reboot with your chosen settings reset resident. Are they not surviving the switch into 68000 mode?
