I have a 40Mhz 68030 board for my A1200 that has a socket for a 68882.
Can I put a 33Mhz 68882 in it okay, or should I get a 40Mhz?

I think you should just try and see what happens...
Worst case scenario is that the FPU fries and dies, or it gets a little buggy. Overclocking from 33 to 40MHz should be no problem IMHO.
Load in some prog that uses the FPU extensively and run it for some hours, to check the stability of the FPU.

I thought this might help you out a bit. I was surfing ebay and saw an auction, ending in a little over 6 hours for a 40Mhz 030 and 40Mhz FPU.
