I am using an Amiga One keyboard model KX 1000-1. Is there a recommended setting other than using a generic keyboard.

Generic is fine.

I use my X1000 keyboard with my dev board and it works great on the pc105 layout, except that you have to remember the alt and boing keys are reversed.

Is there any way to get a bluetooth keyboard working? I've tried a couple but they don't come up in the list when searching for devices.

In theory blue tooth keyboards should "just work"
I haven't tested an actual keyboard, but I have tested my BlueTooth controller in keyboard mode and that worked as keyboard (with about 8 keys :-))
If your keyboard has a button or control anywhere to put it in pairing mode, press that just before scanning for devices on the A600GS, make sure no other devices are grabbing the keyboard (eg my phone always grabs the bluetooth speaker I use if I don't disable it before using with the A600GS)

Could not get my Logitech diNova Mini BT keyboard to work.
It shows on the Bluetooth list and lets me connect. At least apearrently, since the button changes to "Disconnect".
But there is nothing happening on the A600GS when I try to type anything, or use the arrow keys. Nothing happens in mouse mode either, so I'm uncertain what kind of device the A600GS thinks it is.

I don't have a computer with BT and Linux installed at the moment, but I tried my laptop with a live USB with Q4OS.
It was the same there, I was able to connect it, but it did not work.
I did not try to install any additional driver software. I found some forums where logiops is mentioned as a solution for some logitech products.
It does work on windows and on Android without any additional drivers
Normally I use the logitech k400 wireless keyboard w/mouse with the A600GS.
Not relevant in this context of course since it uses its own usb-dongle and not BT.

I thought logitech usb dongle is bluetooth, but only connects to logitech devices.
I know the ones I have are, even have a bluetooth logo on them.

The k400 dongle only have that other logo, like a sun/star
But even if it was, I still think its not relevant in this context since it does not use the A600GS BT
